if you know what you're doing, you can totally minmax this and start promoting and class changing at specific times to not waste as much time and exp

You can go sideways or down with Second Seals.
Up with Master Seals

At L10+ Promoted, you can go sideways with promoted units via Second Seal. [E.G. L10 Paladin can become an L1 Great Knight]

There's some slightly confuddling math behind second seals, but for their use, use them early as possible, but only on an Even Level.

Any stats you gain from gaining Levels are not lost ever- though, if you go from one class to another and the cap is exceeded in doing so, you lose access to some of those stats, and cannot gain any more in that case. I.E. If you have 36 STR and go to a class that has a cap of 30 STR, you "lose" 6 STR, but if you second seal or master seal to a class that has 40 STR cap, you gain those 6 points back.

The "personal stats" [Stats from CHARACTER base, not class and stats gained from Leveling (not promoting)] are also used for determining second gen character Base Stats- which is with the following:

(Parent A + Parent B + Child Base [fixed])/3

So if you paired Chrom with Sumia, and Chrom's gained 18 STR above his class base, and Sumia's gained 15 above hers, Lucina would gain ~11 Str to her base when she joins.
