It should be fine, but you'll miss a lot of context. I think watching the original series up to the end of the Alien arc and then moving onto Ares is pretty ideal. Because this is an alternate universe where the Alien arc never happened, so the original cast didn't go through the insane training they did in the original series. So Japan got beat up badly internationally, and the soccer association made a program to split the original team up to train every other team so that the skill level of Japan rises as a whole.

This results in a bunch of new teams with a member of the original team that defines what that team does. If you don't know the character's history, personality, and playstyle, then some of the nods to the original series will be lost on you. But eh Ares is not bad as a standalone series because it focuses an entirely new team.

Personally though, I love Inazuma Eleven Go the best. Chrono Stone was like this very bizarre but strangely well written time travel story with a lot of surprising underlying drama and good individual stories. IE has always been a guilty pleasure of mine. Shounens that take themselves too seriously just isn't it for me anymore. Kid shows with nods to adult viewers have always been the way to go for me
