IIRC you don't need a lot of sap at one time for any crafting recipes, but it's also barely worth anything to even bother selling it.

Go for animals if you want to make money fast but in the end it doesn't really matter all that much, you can pretty much play the game at your own pace. The biggest point pace-wise I'd say is doing as many season-specific things as you can so you don't have to wait all the way until the next year's season


You can make fertilizer with sap so it's useful enough.
