I especially need to look up how other DMs have handled abuse of the Stealth skill. Well, give things the True Sight keyword, ask then exactly what they're hiding behind, or just increasing the raw number of opponents (they only have so many attacks). Giving things occasionally True Sight isn't that bad, maybe once or twice. It doesn't feel bullshitty until every combat has it. That's assuming you mean in combat though.
