I created a "healthier" chocolate chip cookie. (It still contains an entire cup of butter, so it's still pretty bad for you, but it contains whole grain wheat and oat flour, tons of protein, fiber, vitamins and minerals.)

You can replace the regular sugar with cup agave syrup and increase the superfood powder to cup. This will make a soft cookie and will decrease the glycemic index. I think it should be possible to replace the brown sugar with a mixture of agave syrup and molasses, but I haven't figured out the exact proportions yet.

All of these ingredients can be purchased at Costco.

2 cups Kodiak Buttermilk Power Cakes flapjack mix
cup LIVfit Superfood Blend powder
1 cup butter, softened
cup sugar
cup brown sugar
1 tsp vanilla extract
2 large eggs
1 cup semi-sweet chocolate chips
1 cup craisins (dried cranberries)

Mix together the flapjack mix & superfood blend. In a separate bowl, cream the sugar, brown sugar, vanilla extract and butter. Beat in the eggs one at a time, then slowly add in the powder mix. Stir in the chips & craisins.

Drop by the tablespoon onto an ungreased cookie sheet & bake at 375F for 10-12 minutes.

Allow to cool for 2 minutes, then transfer to a cooling rack.
