You have a couple options if you want to get that done in 1 day (To have more days to do Persona 4 things) There is a priestess persona called Sarasvati at level 17 who learns invigorate 2 at level 19 which restores 5SP a turn. You can do laps doing the first couple floors of bathhouse then do the entire castle looking for SP regen items. if you have an encounter that wont die to just autoattacks then run from it. Eventually you'll get enough SP from Castle treasure chest items to beat him.
