The biggest one is why Thor even struggled against Thanos with no gauntlet when he didn't with gauntlet. That's the whole point of Stormbreaker..... I just write it off as "loltension". EG Thor is five years out of shape and had been drinking literally nonstop for that entire time. IW Thor was in peak condition and didn't really "fight" Thanos so much as land a sneak attack that Thanos barely had time to react to. Plus EG Thanos is bloodthirsty and out to murder the crew, versus IW Thanos who just wanted the stones and wasn't going all unless he needed to. Iron Man didn't switch gauntlets or even take Thanos' gauntlet off in any way. Thanos tries to snap and is still wearing the Nano Gauntlet, but the stones are gone. And there's your answer, nanomachines. Both the NG and Tony's suit use the same nanomachines so he just commanded them to move the stones onto his arm when he grabbed Thanos' arm.
