If you want to knock out helmeted dudes, you can also use LLG mines, which are basically silent gas dispersal tech. Some helmeted dudes can also be tranq'd in their extremities. I haven't used this method, but there are cassettes that play lullabies, and apparently they put enemies to sleep if you use the right music (like the Afghan Lullaby in Afghanistan, etc.).
