I found a way to become basically invincible in AC Odyssey. You take the Greek Heroes armor set, get the armor to at least level 91, put a maxed melee resistance engraving on the arms, maxed ranged resistance on the head, then put points into the melee, ranged, and elemental resistance masteries. This gives you a melee resistance of 105%, ranged resistance of 77%, and elemental resistance of 75%. Some "chance to ignore half damage" engravings and some points into the mastery that heals me for landing hits effectively nullifies what little damage I can still take.

I took it further by putting points into "crit chance/damage while full health" and buying a premium weapon with a "+30% damage while full health" engraving. Then I took it EVEN FURTHER by taking a weapon with a "+15% all damage, -15% max health" engraving and making the second one "+100% all damage, -75% max health" and turning the difficulty all the way up. The enemies still can barely scratch me. The only remotely threatening thing now is enemies with poison weapons, which is a mild threat at worst.

And apparently a story mission can give you a purple spear with a melee resistance engraving, which is normally impossible to put on melee weapons, so you can swap the melee resistance on your arm for ranged, resulting in you being completely immune to both melee AND arrows.
