Heres maybe another analogy that might help?

I dont drink. I dont do illegal drugs. Ive never even smoked a cigarette.

I sure as fuck would never label myself straight edge

Many alcoholics don't label themselves as such. Many addicts don't. Many incels don't.

Just because a part of them do self-identity doesn't change what it is.

Incel is the "straight edge" in his analogy.

Many people who technically fit the necessary requirements to be straight edge don't identify as it.

Just as many people who technically fit the necessary requirements to be an incel don't identify with them.

It's more of a culture thing than a state of being type thing like being an addict is. It'd be more like if you had a subsect of alcoholics who were proud to do it, flaunted escaped DWI abuses and streaks of binge drinking and whatever else, and called themselves alcoholiers. I don't know. Their hypothetical name sucks but you get what I'm saying.

Most alcoholics don't think they are. Just like many incels don't.

Self-identifying is just a trait of that subculture. Self-identifying, refusing to acknowledge it, or etc doesn't make you a part of what he is talking about.

He is talking about a group of them.

It would be like labeling gamers 4chan. Incels are incels. He just isn't talking about the actual term and what they are. He was talking about a specific subset of them. I missed that and is what caused our confusion.
