I'd go with Seymour Flux if I had to pick an FFX boss because it's challenging in a good way as opposed to Yunalesca, which basically boils down to keeping one person Zombied the whole time (with Reflect so they can't be targeted with healing spells) so Mega Death doesn't auto-kill you.
