This fact does not surprise me though, I don't doubt the benefits of a vegetable heavy diet, I just don't want that.
If the idea of that diet makes you hesitant to try it, what might encourage you maybe try it is underdstanding that vegetables are only one dietary component out of several. You also have a huge variety of fruits, whole grains, legumes, nuts, seeds, and the plethora of the typical man-made products (dairy-free cheeses, alternative meats, breads) that can give a dish or meal an extra touch of texture, color, flavor, smell and/or appeal.

We live in a very exciting culinary time. If a dish exists, there's a way to make it healthier with plant-derived ingredients.
