I usually use almond with occasionally using oat. I would use oat milk all the time, but it is too expensive. Try other brands of soy. I've never had the thickness issue with it that you describe. Soy (or pea) really is the only suitable alternative to dairy. Oat and almond milk are essentially expensive sugar water (almond being water intensive and diluted sugar water) devoid of any real nutrition. One might as well be drinking soda.
