Look at what the preservatives actually are. Thats such a generic term. Most of them (including that instant potato ingredient list) are acids. Because they raise the pH of the food item, slowing down the growth of harmful bacteria. The rest are probably emulsifiers which is what binds the ingredients together and makes the potatoes smooth and creamy. And they are naturally derived ingredients.
