This is based on surface level research, but it doesn't seem like you have to worry about anything bad happening if you stop feeding them. Crows are very good at scavenging, so they always have multiple food sources that they go to regularly. If you give them an easy food source they will happily take it and often do things in return, but if you stop it won't be a big deal to them.

Supposedly, they will notice if you leave your house or stop giving food but they will keep an eye out. And if you return after a long absence or start feeding them again, they WILL notice, and very quickly. Even years later, they remember. But they won't get mad or attack you because you stop doing something good for them.

They will, however, remember if you do bad things like attack them. And crows remember faces.
