A warm bean and red qinuoa salad with some fresh veggies.

Red Quinoa:
Boil water, add plenty of salt, I wanted flavor on the quinoa, then add the quinoa when it's boiling.

Prepare the cucumber:
Soak the cucumber and some melon cucumber (the small ones with water melon shaped stripes) in the vinaigrette I made:

Some white wine vinegar, oil, cane sugar, some hot water to melt the sugar, Maggi sauce and garlic powder.

Cut the cucumbers and put them in the vinaigrette

The stuff you sautee:
Cut up purple long beans, chili, garlic and put them in a bowl, add some onion powder (or cut onion if you have it I didn't). These are for the things you put in the pan first.

Strain some white beans, cut up yellow cherry tomatoes and put aside.

Heat up a pan, oil, add the first veggies, sautee until soft, add the beans and tomatoes, season with Maggi sauce, salt and black pepper.

Finishing it:
Strain the quinoa under cold water, let the sauteed veggies get bit cooler.
Then put qiinoe in a bowl, add the sauteed veggies, mix a bit, then add the cucumbers on top, some sliced GOOD tomatoes (these were home grown with lot of good flavor). Then top it off with some of the vinaigrette.

Looks nice. My only issue is I personally don't like tomato skin, so I'd cut the inside out first. And, as always, that's like a spoonful of food >_>


I wanted to put it in a deep dish and that's the largest one I have atm. But it was still kinda filling, but I had 2 servings of it.

The taste is amazing, can't even describe it, it's fresh, beany, crispy, spicy with some amazing different textures.

It was barely any work, took less than 30 mins to make and it has amazing flavor.

I'm never going vegan. But I'm gonna try to make vegetarian food at least once a week.

Honestly these would not work with grocery store tomatoes, they need to be sweet and good. I used tomatoes from my mom's garden. In fact, the long beans, chili and the cucumbers was also from mom's garden.

nice. when i visited my mom last christmas i used kale and heirlooms from her garden to make salads, it was wonderful.
