Someone who stumbled upon a bit of power, goes crazy and then (usually) tries to kill everyone.

Honestly it'd be interesting if villains weren't so cookie cutter.

Nope. Most villains either had the power all along or built it for themselves. And the ones who found a relic usually were specifically searching for it (which is the case in pretty much every Uncharted game). And villains in general seek either money, power, women, and/or revenge (and it should be mentioned that heroes kinda look for the same)

And even the ones who just "stumbled onto it" like some versions of Ganon aren't so much interested in "killing everyone" but instead gaining the remaining power to take over.

Honestly, outside of midcard villains, the whole going crazy bit is also pretty rare. The crazy is used as an excuse for swerving a character to the dark side while maintaining some vestige of their former reputation, instead of revealing that they'd been a Machiavellian all along.

Blame the fact that evil motivations don't exactly tend to be deep. Even noble villains have a superficial streak.
