Just enough to be crispy. Steamed lobster is just as good, but this restaurant called Linwoods near my house had Lobster Tempura. I decided to try it and it was great. Theres also another restaurant in my city called Oceanaire. They have chicken fried lobster...it is so good! I knew that name sounded familiar. I guess it closed last year in San Diego.
