Im attempting it tonight. Got all ingrefients for a basic one (except Japanese mayo but Ill try to flavor it adding bit more umami, acidity and sweetness to regular mayo).

Pic of Okonomiyaki (Japanese pancake with cabbage, bacon etc).



So Im wondering if anyoneone made it before if you have any tips? Ive already watched and read how to make it but its always fun to get more thoughts and ideas.

Oops I did type it correct in the post tho. Not like pizza, thr pancake batter has loads of cabbage and other stuff.

i meant a "pizza" in the most generic sense. it has a bread-like base covered in a sauce and topped with stuff.

When I was in Japan, sometimes it was described as "Japanese pizza". Hard to really describe it in Western cuisine, It has pizza elements and pancake elements. Good though.

Batter done and resting (not added the
veggies, just flour, some corn starch, dashi stock and eggs)

Quick tonkatstu sauce made.

Mayo is prepared.

After Ive done my dishes Ill do the rest

Yeah I had it once at a restaurant, was pretty good and way more filling than expected. You gonna put seafood or any veggies in?

Im a big fan of Korean pajeon. Those are probably easier to make

Yes. Cabbages are a must. Either that or kimchi. Kale, and Collard Greens are good substitutes. It's just mostly about the flour and oil though. I stopped eating it because it's very awful for you.

Only protein Im having is bacon, not in the batter but on top on one side when I flip it. You can add whatever, shrimp, chicken etc. Other veggies etc.

Soon Ill add loads of cabbage, some green onions and chopped gari (pickled ginger).

The sauce and the flour is carb rich, otherwise its not that bad. Has lots of cabbage in it which is quite filling so I dont think I can finish a one portion meal. I might do smaller ones and save up some of them, toppings can be added later anyway.

We make it all the time, it's my favorite Japanese dish. First had it in Hiroshima, which is their most famous dish.

I would not compare it to pizza, it's a savory pancake.

Looks complicated but its pretty easy honestly

Tho this was my first time so it wasnt perfect but yeah, the flavors and textures are great.

Damn it was filling. After half I cant finish. Followed a 2 portion recipie and I have batter for almost one more portion. A 2 portion recipie would be a 4+ portion for me.

Batter (wheat flour) not really breading that's the 'pancake' like part. Not too sweet. Toppings though like a pizza. Cabbage is a must. I usually choose seafood as the protein, TC chose bacon. Then a sauce or two and almost anything else you want.

BTW" Okonomiyaki means "as you like it" (literally 'grilled thing as you like it) and you're encouraged to customize.

It's great drunk food. When I lived in Tokyo it was the go to. You'll hurl ramen all over the subway, but okonomiyaki soaks all the alcohol up.

I made a smaller one on my smaller pan with the rest of the batter. Letting it cool down. Tomorrow at my work break Ill try to see if I can reheat it, the toppings Ill have with me to top when its hot.

Actually it reminds me of a Swedish/Scandinaviann pancake called Raggmunk. Its savory. Pancake batter mixed with loads of potatoes, you can do it with carrots or other root veggies too. Usually served with sliced porn belly and lingonberry jam.

I only lived in Tokyo and Sapporo, so I wouldn't know. Could be a 'grass is greener' thing too though - no matter how good what you're having is - it's always better somewhere else.
