Although having drinks doesn't mean you necessarily lose money by not serving them.

They would probably charge you the same...

It's like going to a Strip Club/Juice Bar or some Nightclubs where, no matter what Liquid is being served, there is always a Minimum Drink Price...in some cases, it can be anywhere from $7-$15 Bucks

Even at much lower prices soda is one of the biggest markups stores have.

They lose out on potential earnings, but there's rarely any direct loss associated with not selling drinks, outside of extreme cases. Drinks tend not to be particularly perishable, so provided you're selling enough to get through a shipment in less than a couple years, you'll be okay. Wine and milk are the most noteworthy exceptions, but in the case of wine, glasses are typically priced such that they lose very little on the opened bottle if they only sell 1-2 glasses and there are often many opportunities to use an opened bottle in the kitchen, and milk is used in so many food dishes that drink sales are a fairly small portion of that.

That said, as you say, drinks are a major revenue source for most restaurants, given that their high margins can compensate for lower prices on other items, so many restaurants' pricing schemes will operate under the assumption that a certain number of drinks are selling. If they don't sell that many drinks, that can lead to losing money overall, even though they aren't losing money on the drinks themselves.

I feel like, if you're at an expensive restaurant, you're probably leaning more into wine or mixed drinks for dinner over water.

That might just be me, though, because I don't really like to drink water with food.

I went to Charthouse one time and had water and it was absolutely fantastic. So smooth and cool.

When friends and I ate at Gordon Ramsay Steak in Paris, Las Vegas. We asked for water and wine. We should have been more specific since the waiter brought us mineral water at $9 a bottle. I am not sure if we even had the option for regular free water.

Even though I thought my steak was worth $60. The three bottles of mineral water kinda annoyed me a bit. I woulda been fine with tap water.
