I'm sure Mexican food in this context includes Tex-Mex and other Mexican food-adjacent foods like Chipotle. It might even include Taco Bell.

I do find the food elitism kinda silly though. I have had excellent and genuinely terrible authentic Mexican food. I have had excellent and terrible Tex-Mex. Styles evolve and morph and the quality of the food itself is often entirely seperate from style and has everything to do with the ingredients and preparation. Now obviously people will have style preferences, but to imply an inherent superiority to a style is silly.

I'm not even sure it's all that rare. I think that a lot of the simplicity of authentic Mexican food, means it's super easy to fuck up, because if just one piece of the equation is done poorly it seriously hampers the whole thing.

Compare that to Tex-Mex where it's a bit easier to compensate for if one piece gets botched.

Traditional Mexican isn't that simplistic as a rule. Look at something like Mole or Cochinta Pibil for examples of that. Inversely it tends to be more introduced foods, such as the Lebanese Al Pastor, that tend to be the simplistic things that people think of with Mexican.

Why are people still quoting the lie on the first page that "authentic" Mexican food only uses oaxacha cheese? There's a shitload of regions in Mexico that all have their own cuisines, you saying something ignorant like "it's only authentic if you use Oaxacan cheese" is more fucked up than white people that say they like Mexican but only eat taco bell because you're trying to act like you're better than them, but only showing your ass in doing so.

If you want to be that reductive and ignorant to an entire regions cuisine, sure. You'll sure to be surprised the weird and gross things people put on food in Mexico sometimes too. Travel the regions, you'll have fun. The food is all very different.
