How about scale? Try to convey either something really large, or really small.
I find those aspects particularly amusing.

I wanted to do a monochromatic theme eventually.

You can only use blacks and greys and you have to choose one other color and all of its shades.

Blacks/greys would be a cool one

The problem with monochromatic is that it doesn't necessarily have to be a theme. Just drawing in pencil allows something to be monochromatic. I think it could be an afterthought for a theme but it shouldn't be a theme on its own because it doesn't direct you to what you should draw. It'd just be week 1 with black/white

Yeah but the challenge would be to find a way to play off the blacks/greys to fit the picture and create a good mood... I think people would do well with it rather than just do what they've been doing (at least those that do traditional work) Or maybe part of the challenge could be having it be digital work?

Maybe it could be specified that you can't just do a black-and-white picture, but you have to include one other color. I'm sure people who prefer traditional art would have some markers or colored pencils or something.

Yep. 800 x 600 can be either horizontally or vertically.
