Yeah, there is way better way to get out the seeds. I usually cut the tomato into halves. Then do a V cut on the stem part and remove, then cut the halves, now you can easy remove the seed parts with your hand. Then julienne the tomatoes and dice them if you want. Minimal waste.

Looks like he was cutting the tomato with the intent that it would go into a chef salad. I would never recommend anyone do that to make sauce or tomato salad.

That said, the way he decided to cut the food although he used basic knife techniques, seem to be intended for fairly skilled cooking. Judging by how thinly he cut the onion he's clearly a very experienced chef.
