Some games don't even let you play the full thing on easy.

i like to play on normal or hard when i want more of a challenge. in my opinion, 'easy' is a great mode to pick when you want your gameplay experience to be more relaxing, or if you just haven't invested a lot of time into getting good at a particular type of game.

it's also interesting to see how games play differently on easy. some game designers have pretty clever ways of preserving the key elements of hte gameplay experience without having as much tension from the limited resources or powerful enemies of higher difficulty modes! others, like celeste, essentially let you build your own difficulty mode by removing whatever constraint is frustrating or overly difficult for you
