Because it comes from "de Brus," which was a toponym description translating to "of Bruce," which became the namesake for his clan. So he was Robert, a member of Clan Bruce, which became the Bruce.

The clan eventually adopted the surname Bruce, but if modern naming conventions where in place back then, he probably would've been Robert DeBrus.
