Having only cooked on a shitty old gas stove in a trailer I still have enough experience to have the opinion gas stoves are superior, fuck that induction shit.

So much better heat control and it's not so much slower than induction anyway.

Gas stoves are becoming much harder to find in America as well (one of my main requirements when house hunting was to have a kitchen with a gas stove).

And then there's cities that bans gas in new constructions like Berkeley, California.

There was an interesting study that showed, I think in the UK, that replacing gas ovens with convection ovens resulted in a significant reduction of the suicide rate.
