The best way is to use a Dutch Oven/cast iron casserole dish.

Heat is just one part of it. What really matters is energy transfer. Warm air circulating an oven transfers much more slowly than a preheated cast iron container that surrounds the dough and has some contact.

I know sourdough is trendy right now but I honestly encourage most people to just try making something like a no knead bread recipe first. Starter is a bit fucky and if you haven't baked bread before you've already got a lot to learn about how to knead/fold/shape/proof etc.

The hardest thing about making bread imo is shaping it properly. it takes a bit of skill and if you don't do it properly will result in a misshapen and/or flat loaf. More than just visual aesthetics if it isn't shaped well it won't rise well, and you'll get dense bread.

That's why making pizza dough is a bit more forgiving. You don't need to worry about making a tight dough ball when shaping or anything.

So if you combine this problem with managing a starter you're adding more complications, which might be a bit much for a first timer.

I say all that. i made sourdough first time no problem. it was subsequent attempts that were disappointing though. To be honest I don't bother with it anymore, I find yeast just much easier. I add beer to give it flavour.

Its up to you really. It's not an impossible task or anything, but natural sourdough is just not as easy as using dry active yeast.
