You can definitely eat rice for breakfast like oatmeal.

You could also do a breakfast version of fried rice: egg, breakfast sausage or bacon with a little maple syrup on top.

My Japanese micom rice maker has a rice porridge mode. It basically just requires more water and a longer cooking time. However I think most of the Asian versions of rice porridge (zhu, okayu, etc) are savory, not sweet.

But here's an Indian spiced carrot congee that sounds interesting.

Ingredients
Congee
  • 1/2 c. coconut milk
  • 1/2 c. golden raisins chopped
  • 1 heaping c. carrots shredded
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground clove
  • 1/2 c. jasmine rice well rinsed
  • 5 c. water
  • 1 inch knob of ginger crushed & sliced
  • 1 star anise pod
Toppings (optional)
  • pistachios
  • dates
  • black-strap molasses
  • date molasses
  • toasted coconut shreds
Instructions
  1. In a medium sized bowl, place the 1/2 c. of rice and cover with water. Using your hands agitate the rice while rubbing the grains between your fingers. Drain of the murky water and fill with fresh water. Repeat this process 2-3 times to make sure the rice is clean.
  2. In a medium sauce pot, over medium heat, add the coconut milk, raisins, carrots, cardamom, cinnamon, and clove. Stir the mixture until well combined and cover for 2 minutes. Remove the lid and stir for another minute or so, the spices should be fragrant and the little liquid there is should be bright orange.
  3. Add the rice, and stir, coating each grain with the carrot mixture. Add the water, ginger slices, star anise and bring to a boil. Lower the heat to a simmer and partially cover the pot. Let simmer for 20 minutes, stirring the rice a few times while cooking to prevent the rice from sticking to the bottom.
  4. After 20 minutes remove from heat and remove the anise pod and ginger slices.
  5. Serve with pistachios, date molasses, and coconut chips. (optional)
