While there are no set recommendations, most research suggests that as long as it's been stored properly, unopened milk generally stays good for 57 days past its listed date, while opened milk lasts at least 23 days past this date (3, 8 , 9).
I knew a professor who said 10 days, but the expiration date seems to be a conservative estimate of when it goes bad. Personally I had milk go bad before the expiration date, so that's surprising to me. --- Sincerely, BuffaloRider ... Copied to Clipboard!

Things are still good after their best by date. Best by, is what the company will vouch for as being at the highest standard of what they consider their product to be.
However I still throw shit away after best by because after that you have a chance of tasting wonky shit. --- Latest Game Completed 100% Resident Evil VII ... Copied to Clipboard!

Before they seal the milk they have an expert taster take a drink, then he/she calculates from the flavor how long before it goes bad.

Milk is one of those products where I dump it the moment it hits expiration. Not going to screw with expired dairy.

lol
If I had to guess, there's some probabilistic distribution where X days after milking, milk has a Y probability to expire. Then they pick a certain time after milking or shipping with a suitably low probability to spoil, then slap that date on all the milk harvested in a single day. That's how I would do it at least. --- <insert sig here> ... Copied to Clipboard!

you don't need to just immediately toss milk past its best before date... you can smell it and it's super obvious if it's still good or not
