YouTube. Im a visual person so seeing them do it helps avoid mistakes in steps that written directions sometimes have.

America's Test Kitchen cookbook is pretty nice and for the most part the recipes are easy to moderate difficulty. explains lots of things well, very good beginner's cookbook.

Joy of Cooking is a fucking awesome cookbook with a recipe for almost everything, but is less helpful than ATK. it's basically made for someone with decent cooking knowledge already.
