Intel Core i7-6700K 4 GHz Quad-Core

or

Intel Core i7-10700K 3.8 GHz 8-Core

all of the specification numbers seem higher for the later gen but I thought the higher GHz is supposed to be better?

Hasn't been the case for ages. CPU Architecture > Core Counts > Core Speeds since at least the P4 days. Only recent example were delusional 7700k fans who could not cope with the fact that Gen 1 Ryzen was better.

The best architecture is to have a singular master-core plus 8 slave-cores so that you have a high powered CPU for single-threaded tasks
