I dunno the timing of the series vs the setting but I feel like 600 years might be a few hundred years shy of iphones.

At first, the domain of the sky was known exclusively to spirits and the messengers of the gods. Then mankind began exploring it in the early chapters of their history by riding through the air like birds on primitive gliders crafted from the skins of animals that man dried and stretched and held together by bamboo sticks. He built great stone towers to reach beyond the clouds, from clay he shaped with his hands and burnt with coal into hardened brick. When a group of little green men from a red planet on the other side of the cosmos came, they offered the people of earth a fleet of mighty steel flying battleships which will allow man to drift across the endless darkness which reaches through all things where man might find a paradise world, planting the seeds of a new utopia. In exchange, mankind left the earth behind them, colonists now in the dark and lonely cold of the void with their homes far behind them. This is when they encountered the hostile sentient asteroids, whose tentacles whip and snap with the strength of a dozen dragons out of their rocky exteriors like boulders held together by bioluminescent rocket organs propelling them from world to world. Servants of a demonic deity of another realm, they suck the life of any inhabitants dry. As man flies back to earth on broken wings to seek aid from the aliens who gave them the ships which were now in dire need of repair, and half their fleet now lost, with the monstrous eating asteroids not far behind them, the remnants of travelers from the lush planet in a solar system not unlike our own encounter a kingdom of intergalactic sociopolitical problems when they discover other people already in space, other empires, and a vast host of other adventure now in the clutches of the world of the ocean-like night sky.

I remember reading something about how it would most closely align to somewhere in the 1400s

Pretty sure it is. The series is inspired by the War of the Roses, a civil war between the Lancaster and York (hence Lannister and Stark) royal families in the 1400s.

Well, the War of the Roses took place in the mid-1400s, so Westeros would be about twenty-years ahead of us. Maybe even moreso; in some ways, they're ahead of where we were in the 1400s.

Well they have magic. I feel like that would make them way more advanced than us by the time they get to our age

Not just magic though. The maesters' medical knowledge outpaces medieval Europe's. For instance, they know to sterilize their surgical equipment with boiling vinegar.

Cersei also seems to be aware of microscopic sperm, but that may just be a fuck-up on GRRM's part. If it isn't, that implies a fairly extensive leap in the knowledge of biology given that Cersei - who is an absolute fucking moron - is aware of it.

it is based around roughly the 1400s, yes, but again, in the history of the setting, they've been stuck in this era for about 10,000 years. so if 1400+10,000=1400, then 1400+10,000+600 is also going to =1400.
