For one thing they ran out of money, also the director was very clinically depressed. But hey, art.

Though personally, I'm not a fan but it is memorable. And memorably bad, but hey great theme song. PenPen is great too.

Evangelion wasn't quiiiite influential enough to ruin mecha. Gundam and Macross are still much more influential, and even more retro stuff like Mazinger Z, lots of cool mecha shows have hit in the decade+ since Eva.
