From the ones I've played? Tekken 5.
It might be considered overrated, but it introduced the arcade ranking system of Kyu, Dan and all that stuff, it has returning characters who hadn't been in a Tekken game since Tekken 2, it had a great roster for a PS2 fighting game, the music and cinematics were great for the time and it was the first Tekken game to introduce customization. It's a solid fighting game overall. imo the series peaked around tekken 3/tekken tag 1, with another small peak around tekken 5

Every one of them were better than the prior entries except for the following:
