Mario stages are largely interchangeable and gimmicky. Besides a few stages from the original Super Mario Bros. none are memorable. Meanwhile every single Sonic stage from the main 2D series has a particular character to it that's easily evoked

Either way, I don't have a very academic answer. 2D platformers aren't my favorite genre, so I don't break them down very often. Outside of the original SMB the Mario games are longer and just have a lot more variety. Each level is an obstacle course for you to overcome. You're often introduced to new power-ups, enemies, obstacles, something new with the level etc.
Super Mario Bros 3 for instance is a masterpiece when it comes to levek design. The game constantly surprises you with new stuff as you play through it. This game is nearly 30 years old. Each game afterwards follows the spirit of SMB3 and generally refine the gameplay. Sonic is a shorter game that is more focused on replay value and finding different routes through the levels. Super Mario Bros 3 is flawless except some of the weird sand levels with jumping bricks but mainly because the desert levels always look so boring but still they had the monster sun so yeah SMB3

Not that I'm a super big fan of a lot spring placement sometimes since it seems like the only way to really play sonic in an enjoyable and smooth feeling way is to have memorized the entire level already --- THIS IS WHAT I HATE A BOUT EVREY WEBSITE!! Sonic plays like a theme park ride in a way. A combination of a pinball machine and a rollercoaster. Sometimes the level just throws you around. It's fun. I wouldn't say it takes up the majority of the game though.
