GTA San Andreas...
You start off as a nobody gang banger riding bicycles to fast food restaurants and by the end you're running a casino, pulling off elaborate heists and even doing an aerial assault on a Hollywood mansion. All this spread across a ridiculously detailed rendering of three major cities on the west coast.

Morrowind probably, the scale of the game, the exploration, the adventure, I never played anything like it in my life and haven't felt so immersed. I felt like that was the first real "open world" game I had played and it was groundbreaking.
