FF_Redux 09/23/17 6:01:18 AM #1:	Holy man those were tasty. What I did was: Buns: I toasted the inside lightly by putting them on the edge of the pan with the opening down, so the pan edge is inside the bun. Hot-dogs: I cut them up like that, to add some texture, crispy edges on the cuts, and to seep in flavors, I'll come back to that. I panfried them on high heat in olive oil and normal oil so the olive oil don't burn. Kept doing that so they got but crisp on the outside and browning. Then I added butter and crushed dried tabasco chilies. This added a bit of chili flavor and heat but also coated the hot-dogs with a delicious buttery flavor that seeped inside the cuts. Then I topped it with ketchup, mustard and dried chili threads that I soaked in a quick pickle solution. The flavors of this was great, the buttery saussagy flavor with some heat and chili tones that marry well with the tart and sweet from the ketchup and mustard and the nice vinegary chili threads that boosted the flavors. I cooked them well on a pan to get a good sear.
