When you talk to people in real life, you quickly realize that people do not always use words literally and sometimes omit words because they are not necessary for the speaker's meaning to be understood. "Vegan cheese" would be more accurately called "vegan cheese substitute," but it is completely unnecessary to say "substitute" since it is obvious to any adult with a brain that cheese cannot be vegan, and thus "vegan cheese" would not literally be cheese, but a cheese-like substance that vegans use in place of it. I mean I know I could go vegan if it came down to it but not being able to eat even a regular cheese pizza or ice cream (I know there's substitutes and I eat them sometimes but being vegan seems so much harder socially)... I did end up going vegetarian about a year ago though and it hasn't been hard at all. The hardest thing is having to ask at restaurants whether something like soup has meat stock or not. I understand why you don't want to go all the way. I've had the worst hankering for a cheese pizza lately. :( You could always be mostly plant-based and a little flexible with dairy and other things for a treat or socializing.
