This looks like a legitimately researched and sourced article with excerpts from the scientists on their methodology and how they treated results. I'm inclined to believe it.

Now the practicality of cooking rice twelve hours in advance and leaving it in a refrigerator definitely bears question. Then there's the question of how many people have access to refrigeration that can work to alter the starches in rice. They're not done yet, but there's absolutely great potential here.

It could work in a food environment where you pretty much always keep servings of rice prepped. That's not so uncommon in Asian households where there is often several servings of leftover rice in the rice cooker that can be used again and again over the course of days. If cooling your rice were an end of the day chore before bed, it could work.
