Probably for the same reason as they had it in the previous games--it makes a statement that could be taken as a jab at a partucular demographic, like in AC1 when they took sides in the Crusades and had that intro screen that said HEY SHUT UP WE HAVE CHRISTIANS IN THE OFFICE TOO.

It's not in any of the advertising or sales stuff, it's just there for the initial loading screen that's only there for people after they bought the thing. It's not really about trying to be progressive, it's basically saying "we're going to cover sexist, racist, homophobic, anti trans, anti religion, and other prejudiced themes in our game but we have people of all walks of life working on it and those views aren't representative of us."
It's basically them trying to nip any potential SJW backlash in the bud, but sure cry about it more snowflake.
