Outbreak (1995)

That I remember watching in adulthood?

Mad Max: Fury Road

Those two definitely stood out to me during their respective eras. I haven't rewatched Outbreak in 22 years, though, so I don't know if it still holds up to its god-tier status that I felt it had at the time.

Why should sci fi be its own genre? There can be sci fi action movies (Terminator), sci fi thrillers (Alien*), sci fi survival movies (the Martian), sci fi noir (Blade Runner), etc. In movies it seems to be more of a setting than a genre, while in literature, while it can be differentiated as such, science fiction and fantasy will more often adhere to a similar adventure style. Some, like 2001 or Interstellar*, follows this too, discarding Terminator as being sci fi rather than action seems silly.

*I haven't seen these movies so I could be off whatever

Fury road is high up there too. Like I think as a cinematic spectacle thats hard to beat but die hard seems more like a complete package imo

Raiders of the Lost Ark I think but Aliens is pretty close

Also have a soft spot for True Lies

For modern stuff, both Raids are excellent

While there are some semi-action movies I'd rank higher then it, if I was looking only for a straight-action film I'd go with Dredd.
