I played through it on Sunday with my friend in local co-op and it's everything it promises to be and nothing more.

Leo and Vincent are great, likeable, but flawed characters; the gameplay is varied and solid almost throughout (there's a slightly janky motorbike chase near the end, but it doesn't last long enough to outstay its welcome), and the 'chill' sections where you get to just plod about and talk to people or mess around with stuff are the best. We literally spent about half an hour on one because there was so much stuff you could interact with and both Vincent and Leo interact with things in different ways. And there's about a dozen or so competitive mini-games dotted about that you can find and compete against each other in. Best part, if you can only play online, only one of you needs to buy the game.

It's only about 6-8 hours long (we finished in about six and a half hours or so and that was with copious amounts of messing around) and there's not a huge amount of replay value, other than a few alternate paths and picking up the achievements (which are actually worth going back and getting for the most part as they're almost all for dumb Easter eggs or silly scenes), but I was happy to pay 20 for a day's entertainment.

It's a good game to LP! I'd recommend doing it splitscreen if you have the option, even though the game takes a bit of a hit performance-wise. Much easier to follow what's happening as a viewer.

My wife has the ability to play video games, but plays them very rarely. She said she was willing to play with me, and she is probably the only realistic person I can get to do this with me. Will I have a hard time with someone who isn't terribly skilled as my partner?

For the most part, no, but there are a few sections that might trip her up. For the most part, you can compensate (e.g. shooting sections), but there are a couple of sections that require both of you driving or one of you driving/one of you shooting, etc. They're not too hard though and you can probably power through them with enough attempts. And you can always back out to the menu and switch characters for that section, if you think that might be easier.

Wait, doesn't the game force splitscreen?
