I used to be super active and got really fit (but not buff) but my lifestyle significantly changed.

So six months of strength training and eating accordingly and all I did was gain 5 pounds straight to the gut.

I'll just do cardio, fuck it. Gaining muscle is too complicated.

This. In my experience people fuck up 2 things in working out.

1. Not enough food/sleep

2. Not enough volume/pain and suffering

How do I not get fat, though?

Seems like it's inevitable that you will get way more fat than muscular doing this and then have to cut.

The kinds of foods you eat. Simple carbs will get you fat (bread, flour, sugar, soda).

Nuts, whole milk, yogurt, lean meats, limited potatoes, limited whole grains, plenty of healthy fats and fruit& vegetables. That sort of diet wont get you fat.

It raises growth hormone levels, improves insulin sensitivity, increases your work capacity between lifting sets, and mitigates fat gain. It's very beneficial to bulking.

Oh yeah, another cool factoid is that HIIT (interval cardio) can actually lower cortisol levels caused by a lack of sleep. Neat study shared by Dr. Rhonda Patrick on Twitter I have.

Going from memory I made a mistake about the details. It wasn't cortisol levels that improved but insulin resistance, which is still important.
