Pretty much every ethnic restaurant in America is just a heavily bastardized american version of the actual cuisine.

Authentic Chinese food is largely unappealing to American palates and they eat a lot of parts of animals we consider to be waste products. They also mostly prepare fish with the bones in, which would actually kill a lot of Americans if they tried to eat it.
