Obviously charcoal, but it has its negatives... Mainly it takes a long ass time to get the fire going (without lighter fluid), and clean-up is messier.

Use a chimney starter. They work great and eliminate the need for lighter fluid.

Yup, but still takes a while vs just turning on a dial.

Wood(I use Hickory and Apple) > Lump Charcoal > Charcoal Briquettes > Propane

But I'll eat any grilled or BBQd meats. Regardless of my preference. I did some Ribs today. And Cognac-glazed Whole Wings. Smoked with the apple and hickory and finished off on the grill with lump charcoal. I just finished eating. Delicious.

Can't you mix wood chips/chunks with charcoal and get the same effect as cooking with wood?

ideally you use charcoal with a chimney or box of wood chips off heat, you get the charcoal effect with the flavor of the wood,

Not the exact same, but it's still good. I forgot to mention that I did indeed use wood chips today. I was out of the chunks I usually use, and all the store had was chips, so. The problem with the chips is that they don't last as long and you have to add more a lot. It's almost like a manual pellet smoker. It gets a bit annoying. But it's all good. It turned out okay, and we sold a few dinners.

Except for mesquite. I fucking hate mesquite. And as a very fat man that doesn't hate much, that means a lot.
