If Cohen "flips", I can see two outcomes.
1) Perjury - Any sensible US citizens know that Trump is innocent of any criminal activity. If Cohen makes any accusations, they are clearly lies.
2) Treason - If Cohen turns on Trump, he is essentially betraying our nation and government. That comes with harsh consequences.

Except the admissable evidence would be evidence of a criminal conspiracy with Trump that isnt protected by privilege...

1) you're assuming that there is physical evidence that exists in the first place that can be admissible. If Trump did break the law and acted wisely, there would be very little evidence.

2) you're assuming that there is some clear smoking gun where Trump tells Cohen to break the law and then releases a maniacal laugh. It is more than reasonable to suppose that the evidence, if any exists, is far more ambiguous than that and that it will take significant effort to separate what should be considered privileged or not.
