Tips on spices, veggies, whatever I'll use in it.
Basics is gonna be beef as the main meat, I'll flavor it with unsmoked bacon and fresh chorizo. Garlic, onion. Dark beer, brown sugar, salt, black pepper. The chilies I'll use are dried chipotle, ancho, different ones that were home grown and dried, I'll toast the chillies first. Near the end I'll add black beans. Main spices are cumin, oregano, paprika and ground coriander seeds. It's gonna be in the pot stewing for many hours so the meat gets super tender. Toppings I can vary every time I eat it (I'll have enough to freeze some chili). But for tomorrow I'll have cilantro, tomato, white onion, avocado, lime and sour cream, I'll serve it with corn and wheat tortillas. The trick is to undercook the onions. Everybody is going to get to know each other in the pot. I'm serious about this stuff. I'm up the night before pressing garlic and dicing whole tomatoes. I toast my own Ancho chilies. It's a recipe passed down from in the family for generations. It's probably the thing I do best.

That said, you definitely want to get cayenne peppers first and foremost for chili. Having cayenne pepper powder is preferred. Should you not have that readily available, you could try making a pepper powder yourself. I'd suggest doing that with the other pepper cultivars you're gonna add as well. The chillies I'll use are as I said, ancho and chipotle, then I have several different types of dried chilies that are home grown, I dunno all their names, but one is medium sized red ones, not too spicy but nice flavor, then I have some tabasco peppers, and some really small ones that are quite spicy, and then some havanna peppers that aren't habanero strong but has that habanero sweetness. then I have some yellow ones that has an odd flowery citrus taste to them, I may or may not use, also quite spicy. --- ... Celery is viable to add to chili as well. I don't really like adding beans to chili, but that doesn't mean you can't. You can add rice or corn, but that's a risky venture with little pay off.
