I think a lot about how, in the world of Avatar (The Last Airbender, not the blue cat people), there's mostly just a giant ocean on the other side of their world.

Well, it'd be so radically different as to be unrecognizable. We tend to look at a theory like that and be like, "Oh, the Africans and Indians and Native Americans would all be neighbors!" but in reality, those groups would have evolved radically differently and would likely be completely unrecognizable because the groups that we know evolved the way they did largely because of their geographical locations.
