They call it the sorcerer's stone in the version I've watched. Did they film all those scenes multiple times so they could call it the philosopher's stone in other areas?

I don't know. Nevet thought of that.
And why the name change?
They think the typical American hasn't ever heard of a philosopher's stone before, as related to alchemy?

There is no "would of", "should of" or "could of".
There is "would've", "should've" and "could've".

The British Version is superior, you can tell they were annoyed having to re film the US version.

More likely they believed that Americans would react better to "Sorcerer" than "Philosopher". Not really anything to do with the stone itself, just that first word.

Sorceror" sounds exciting, "philosopher" sounds boring, and nobody in America knows what a philosopher is. Famous title changes to take account of the incredible ignorance of the average American include "Licence Revoked" which became "Licence to Kill" when over 70% of those polled didn't what "Revoked" means, and "The Madness of King George III", which had to drop the "III" because it was realised that Americans would be uninterested in the film since they'd obviously missed the first two films of the trilogy.

Tbh I had no idea about any alchemy lore until FMA lol.

Of course, I didnt read Harry Potter for the deep mythological lore cuts. I read it because I was a ten year old and the fantasy of a ten year old being told here, leave behind this boring normal life for a world of magic and cool adventures was neat-o

They could have titled it Harry Potter and his Fat Ass Family and it probably wouldnt have changed my opinion lol

Do you think people in the US had no way to access the Philosopher's Stone version? You must based on the bullshit you just spouted.
