I watch for how much grease is left in the burger, so it's just right.only ever had a pink burger once or twice. Wasnt bad.

Medium is perfect for a burger imo. It adds so much more flavor when the meat isn't overcooked and gray throughout the entire thing.

That is how you get ecoli and mad cow.

According to the food code, ground beef should be cooked at 155 degrees F internally and held there for 15 seconds, or 158 degrees for even a moment, in order to kill pathogens at the center of the meat. Unlike a rare steak, a rare burger is risky because the germs from the outside of the meat have been ground inside.

As a dude who loves his steak medium rare and nice and pink on the inside, ground beef should ALWAYS be cooked well. No pink whatsoever. The two meats are totally different in how they're prepared, as the bad stuff grows on surface area, and ground beef is all surface area.

I eat my steaks medium rare and understand that while that is completely safe, ground meats are unsafe/risky to eat medium rare/medium. That said, most places end up over cooking the fuck out of the burger if you get it well done so I still get it medium most of the time anyway and roll the dice. It definitely tastes better.

I dont really care about the temp of a burger other than I dont want it to be rare or overcooked and dry.

Burgers aren't like steaks where if it's well done you definitly cooked most of the moisture out of it. My favorite kind of burgers are smash burgers, those are really thin, usually well done and super juicy.

Medium Rare is for steaks -- in order to maintain the integrity of the meat fibers.

With burgers, the ideal temperature is medium, to medium-medium-well.
